Ingredients
- Ingredienser (4 portioner)
- 250–300 g svampe (champignon, portobello eller blanding)
- 300 g risottoris (fx arborio)
- 1 lille løg, finthakket
- 2 fed hvidløg, finthakket
- 1 dl hvidvin
- 1 liter varm svampebouillon (eller grøntsagsbouillon)
- 50 g smør
- 75 g friskrevet parmesan
- 2 spsk olivenolie
- Salt og friskkværnet peber
- Frisk persille (valgfrit)
- Eventuelt lidt citronsaft
Instructions
Klargør svampene: Rens svampene og skær dem i skiver.
Varm 1 spsk olivenolie på en stor pande ved høj varme.
Steg svampene, til de er gyldne og har afgivet væske.
Krydr med salt og peber og sæt til side.
Sautér løg og ris: Varm olivenolie og 25 g smør i en gryde ved middel varme.
Tilsæt løg og steg i 2–3 minutter uden at brune.
Tilsæt hvidløg og steg i 1 minut.
Kom risene i og rør rundt i ca. 1 minut, så de bliver let blanke.
Tilsæt vin og bouillon: Hæld hvidvinen i og lad den koge ind.
Tilsæt derefter varm bouillon lidt ad gangen (1–2 dl pr. gang).
Rør jævnligt og lad væsken absorbere, før du tilsætter mere.
Efter ca. 18–22 minutter er risene møre, men stadig al dente.
Gør risottoen ekstra cremet: Rør svampene i.
Tilsæt resten af smørret og parmesan.
Smag til med salt, peber og evt. lidt citronsaft.
Servering: Server straks – risottoen skal være blød og let flydende.
Top med ekstra parmesan og frisk persille.
