Classic Spaghetti Carbonara
Carbonara is one of the most iconic pasta dishes from Italian cuisine – and also one of the most misunderstood. The real version is silky smooth and intense in flavor, but contains no cream, onion or garlic. The creaminess comes solely from eggs, cheese and pasta water.
Here you get a classic carbonara, made exactly like in Rome.
Ingredients
- Ingredienser (4 personer)
- 400 g spaghetti
- 150 g guanciale (kan erstattes af pancetta eller bacon)
- 3 æggeblommer
- 1 helt æg
- 75 g Pecorino Romano, fintrevet
- Friskkværnet sort peber
- Salt til pastavand
Instructions
Kog spaghetti i rigeligt, godt saltet vand til al dente.
Gem ca. 2 dl pastavand.
Skær guanciale i stave eller tern og steg dem langsomt på en tør pande, til fedtet er smeltet, og kødet er sprødt og gyldent.
Tag panden af varmen.
Pisk æggeblommer, helt æg, pecorino og rigeligt sort peber sammen i en skål.
Kom den varme pasta over på panden med guanciale og vend rundt i fedtet.
Tag panden helt af varmen og tilsæt æggeblandingen.
Vend hurtigt rundt og tilsæt lidt pastavand ad gangen, til saucen bliver cremet og blank.
Smag til med ekstra sort peber og evt. mere ost.
