Pasta Meatballs in Tomato Sauce
Pasta with meatballs is the kind of comfort food that never goes out of style. The little meatballs are browned and simmered in a simple, aromatic tomato sauce – perfect for a cozy weeknight or as a weekend meal for the whole family. Serve with fresh pasta, lots of parmesan and a glass of red wine.
Ingredients
- Kødboller
- 400 g hakket oksekød (eller halvt oksekød, halvt svin)
- 1 lille løg, finthakket
- 2 fed hvidløg, presset
- 1 æg
- 3 spsk rasp eller friskrevet brødkrumme
- 1 spsk mælk
- 1 spsk finthakket persille
- ½ tsk tørret oregano
- Salt og peber
- Olivenolie til stegning
- Tomatsauce
- 2 spsk olivenolie
- 2 fed hvidløg, finthakket
- 1 løg, finthakket
- 1 dåse hakkede tomater (400 g)
- 1 spsk tomatpuré
- 1 tsk sukker
- 1 tsk tørret oregano eller basilikum
- Salt og peber
- Evt. lidt chili for varme
- En håndfuld frisk basilikum (valgfrit)
- Tilbehør
- 350–400 g frisk eller tørret pasta (f.eks. spaghetti, fettuccine eller penne)
- Revet parmesan til servering
- Frisk basilikum eller persille
Instructions
Kødboller
Bland alle ingredienserne til kødbollerne i en skål.
Rør farsen godt sammen, men undgå at overælte den.
Form små kødboller (ca. på størrelse med en valnød).
Varm olivenolie op på en pande eller i en støbejernsgryde.
Steg kødbollerne ved middelhøj varme til de er brunet godt af på alle sider (ca. 5-7 min).De skal ikke være gennemstegte – de færdigtilberedes i saucen.
Tag dem op og læg dem til side.
Lav tomatsaucenI samme pande: svits løg og hvidløg i lidt olivenolie til de er bløde.
Tilsæt tomatpuré og steg 1 minut.
Hæld hakkede tomater ved, tilsæt sukker, oregano, salt, peber og evt. lidt chili.
Lad saucen simre i ca. 10 min.
Kog pastaenKog pastaen i rigeligt saltet vand til den er al dente.
Gem en smule pastavand og dræn resten.
Bland kødboller og sauce
Læg kødbollerne tilbage i tomatsaucen.
Lad det hele simre sammen i yderligere 10–15 minutter under låg, til kødbollerne er helt møre og saften er trukket ud i saucen.
Juster konsistensen med lidt pastavand, hvis den er for tyk.
Vend den kogte pasta i saucen lige før servering – eller servér saucen ovenpå.
