Pasta with shrimp and ricotta cream

Are you looking for an easy and flavorful pasta dish that's both creamy and fresh? Then this recipe with ricotta, lemon, peas, and shrimp is just the thing. It's quick to make, requires few ingredients – and tastes like summer, no matter the season.

Ingredients

  • 200 g pasta (fx linguine, spaghetti eller penne)
  • 150 g rejer (kogte og pillede – gerne store)
  • 100 g ricotta
  • 100 g frosne ærter
  • 1 økologisk citron (skal + 1-2 spsk saft)
  • 1 lille fed hvidløg, finthakket
  • 2 spsk olivenolie
  • Salt og friskkværnet peber
  • Frisk persille eller basilikum til topping
  • Revet parmesan (valgfrit)

Instructions

Kog pasta og ærter

Kog pastaen i letsaltet vand.

Tilsæt ærterne de sidste 2 minutter af kogetiden.

Gem lidt pastavand og dræn resten.

Steg rejerne hurtigt

Varm 1 spsk olivenolie på en pande.

Tilsæt hvidløg og steg hurtigt i 30 sek.

Kom rejerne på og varm dem i 1-2 minutter (kun til de er gennemvarme – oversteg dem ikke).

Tag af varmen og dryp med lidt citronsaft.

Lav ricottacremen

Rør ricotta sammen med citronskal, 1 spsk citronsaft, salt, peber og 1-2 spsk pastavand for at gøre den cremet.

Vend det hele sammen

Tilsæt den varme pasta og ærter til ricottacremen og vend rundt.

Tilsæt de stegte rejer og evt. lidt ekstra pastavand, hvis det virker tørt.

Servér

Anret i skåle, dryp med lidt olivenolie og top med frisk persille/basilikum.

Evt. lidt revet parmesan eller ekstra citron på toppen.
