Bake crispy cookies with a perfect base – use a baking sheet in the oven or grill

There's something special about freshly baked cookies. The intense aroma of browned butter and melted chocolate wafts through the house, and the only hard part is waiting for them to bake. This recipe will make cookies that are both crispy on the edges and soft in the middle – just the way they should be. And if you want to take them to the next level, try baking them on abaking steelfor the perfect bottom.

Why use baking steel for cookies?

Baking steel is known for its extreme heat conduction, which means your cookies get quick and even heat from below. This gives crispy bottoms and a delicious caramelized edge – without overbaking the middle. And it works both in the oven and on the grill. For cookies on the grill, simply place your dough balls on baking paper directly on the hot baking steel and close the lid.

The perfect cookie dough

The dough is made quickly with simple ingredients: softened butter, brown sugar, sugar, eggs, vanilla and lots of chocolate. The combination of baking powder and baking soda ensures that the cookies both rise and have bite. Remember to use brown sugar – it adds flavor and chewiness.

Grill or oven? You decide

You can bake these cookies in the oven at 180°C (fan) for 10-12 minutes. But if you want a crispier bottom and a slightly smoky grill flavor, try baking them onbaking steel in grill. Heat the grill with the baking steel in, and bake with the lid on using indirect heat.

Tips for the best texture

  • Use coarsely chopped chocolate rather than chips – this results in uneven distribution and small pools of melted chocolate.
  • Let the dough rest in the refrigerator for 30 minutes for more depth and structure.
  • Don't bake for too long – the center should still be a little soft when you take them out.

A baking sheet is not just for pizza

Many people associate baking steel with pizza and bread, but it's actually great for anything where a crispy bottom is desired. Cookies, pies, flatbreads and much more. Qookwarescarbon steel baking panwithstands extreme heat, and you can use it in the oven, on the grill, on gas, and even over a fire. In other words, it is the most versatile baking equipment you can invest in.
