These cottage cheese buns are perfect when you want to bake something easy, healthy and filling – and they don't require flour or yeast. We baked them directly on the grill with ourcarbon steel baking pan, which gives a crispy bottom and a nice texture. They are packed with protein from cottage cheese and eggs, and the oatmeal gives a nice, coarse crumb. Use them as breakfast buns, for a packed lunch or as a snack on the go.

Bake healthy and crispy cottage cheese buns – on the grill with a carbon steel baking sheet
Do you want to bake buns on the grill that are both crispy, healthy and packed with protein? With acarbon steel baking panyou can do exactly that – and the result will be far better than on a regular baking sheet. The high heat absorption and intense heat conduction from the steel mean that your buns will have a crispy bottom and a nice structure, even without yeast or wheat flour.
These cottage cheese buns are made with just a few ingredients: oatmeal, cottage cheese and eggs. When baked on the grill on a baking sheet, you get a surface that almost resembles a stone oven – perfect for quick baking. Use the grill as an oven by heating the baking sheet to approx. 225–250°C with the lid on. This ensures even and intense heat from below, which creates the characteristic crispiness.
A good onecarbon steel baking panis the way to go if you want to take grilling to the next level. It holds heat exceptionally well, withstands high temperatures and develops a natural non-stick coating over time. At the same time, the buns bake evenly, which can be a challenge on a regular griddle or baking sheet.
The cottage cheese buns here require no rising time, no flour and can be shaped directly on baking paper. Use a wet spoon and place them on the hot steel – and the rest will almost do itself. The result? Protein-rich buns with a chewy crumb and delicious crust – perfect for breakfast, a packed lunch or as a healthy snack.
