Chicken in asparagus – classic recipe in a giant tartlet

Chicken in asparagus is the epitome of classic Danish comfort food. In this version, we make the filling from scratch with boiled chicken and homemade broth – and serve it in a huge, crispy tartlet from the Othello bakery in Aalborg. The result is both nostalgic and impressive on the table – perfect for guests or a cozy Sunday dinner.

Ingredients

  • Kylling & bouillon:
  • 1 hel kylling (ca. 1,2–1,5 kg)
  • 1 liter vand
  • 1 løg, delt i kvarte
  • 1 gulerod, i grove stykker
  • 1 laurbærblad
  • 6–8 hele peberkorn
  • Fyld:
  • 1 dåse aspargessnitter (ca. 400 g), drænet
  • Det kogte kyllingekød, plukket i mundrette stykker
  • Den opbagte sauce:
  • 50 g smør
  • 50 g hvedemel
  • 1 dl væde fra aspargesnitterne
  • 6–7 dl kyllingebouillon (fra kogning)
  • 2 dl madlavningsfløde eller piskefløde
  • Salt
  • Friskkværnet sort peber
  • Evt. 1–2 tsk citronsaft (smag til)
  • Servering og pynt:
  • Friskhakket persille
  • 1 kæmpe tarteletskal (vi købte vores ved den lokale bager)

Instructions

Kog kyllingen: Kom kylling, vand, løg, gulerod, laurbærblad og peberkorn i en stor gryde.

Bring det i kog og skru ned, så det kun simrer.

Lad det simre i 60–75 minutter, til kødet er mørt.

Tag kyllingen op og si bouillonen – gem bouillonen.

Pil kødet fra benene og skær eller pluk det i mundrette stykker.

Lav den cremede opbagning: Smelt smørret i en gryde ved middel varme.

Tilsæt melet og pisk i 1–2 minutter uden at det tager farve.

Tilsæt bouillon og væden fra asparges lidt ad gangen under konstant piskning.

Når saucen er glat og cremet, tilsættes fløden.

Lad saucen småsimre i 5–10 minutter, til den tykner.

Konsistensen skal være cremet, blød og let flydende uden at være tynd.

Tilsæt fyldet: Kom kyllingestykkerne i saucen.

Tilsæt de drænede asparges.

Lad det simre i 3–5 minutter.

Smag til med salt, peber og evt. citronsaft.

Samling – stor tartelet: Varm tarteletskallen ved 180 °C i 5 minutter.

Fyld den med varm høns i asparges.

Drys med friskhakket persille og server straks.

Alternativt: Brug klassiske små tarteletter.

Varm skallerne kort i ovnen og fyld dem lige inden servering, så de forbliver sprøde.
