Rigatoni with long-braised beef sirloin

This rigatoni with slow-braised beef tenderloin is a deep, dark and irresistible pasta dish. The beef simmers for hours with red wine, tomato and herbs until it falls apart and becomes juicy and stringy. A dash of cream rounds out the sauce and gives a silky finish that binds perfectly to the pasta.

Ingredients

  • Ingredienser (4–6 personer)
  • Kød & braisering:
  • 1–1,3 kg oksetykkam
  • Salt og friskkværnet sort peber
  • 2 spsk olivenolie
  • 1 stort løg, finthakket
  • 2 gulerødder, finthakket
  • 2 stængler bladselleri, finthakket
  • 3 fed hvidløg, finthakket
  • 2 spsk tomatpuré
  • 2,5 dl rødvin
  • 2 dåser hakkede tomater
  • 3 dl oksefond
  • 2 kviste rosmarin
  • 2 laurbærblade
  • 1 tsk tørret oregano
  • Pasta & finish:
  • 500 g rigatoni
  • 50 g smør
  • 75 g friskrevet parmesan
  • Frisk basilikum eller persille
  • Ekstra olivenolie til servering

Instructions

Forbered kødet: Dup oksetykkammen tør og krydr generøst med salt og peber.

Lad kødet temperere i ca. 30 minutter inden stegning.

Brun kødet grundigt: Varm olivenolie i en stor støbejernsgryde ved middel-høj varme.

Brun kødet i 3–4 minutter pr. side, til det får en mørk og karamelliseret overflade.

Tag kødet op og læg det til side.

Byg smagsbasen: Sautér løg, gulerod og bladselleri i samme gryde i 6–8 minutter.

Grøntsagerne skal være bløde og let karamelliserede.

Tilsæt hvidløg og tomatpuré og rist i yderligere 1–2 minutter.

Deglacér: Hæld rødvinen i gryden og skrab bunden fri for stegesmag.

Lad vinen reducere i 3–4 minutter.

Tilsæt hakkede tomater, oksefond, rosmarin, laurbær og oregano.

Langtidsbraisering: Læg oksetykkammen tilbage i gryden.

Lad retten braisere i ovnen i 3–4 timer ved 150 °C.

Kødet er færdigt, når det falder fra hinanden uden modstand.

Træk kødet: Tag kødet op og træk det i grove trevler med to gafler.

Fjern rosmarin og laurbær fra saucen.

Læg kødet tilbage i gryden og lad det simre uden låg i 15–20 minutter.

Smag til med salt og peber.

Kog pastaen: Kog rigatoni i rigeligt saltet vand til al dente.

Gem 1–2 dl pastavand.

Saml retten: Vend pastaen direkte i raguen sammen med smør og parmesan.

Justér med lidt pastavand, så saucen bliver silkeblød og binder perfekt til pastaen.

Top med friskhakket persille eller basilikum, ekstra parmesan og lidt god olivenolie.
