Recipe for classic meatballs with a perfect crust
Frikadeller are the epitome of Danish food culture – and when they are made right, they are both crispy on the outside and juicy on the inside. But how do you get the perfect minced meat with the right consistency? And how do you fry the frikadeller so that they get a golden crust without becoming dry? In this recipe, we guide you step by step to the perfect frikadeller.
Time: about 20 minutes
Ingredients
- 500 g hakket svinekød (eller kalv og flæsk – ca. 60/40
- 1 lille løg, hakket eller revet
- 1 æg
- 1 dl mælk
- 1 dl rasp
- 1 tsk. sennep
- 0,5 tsk. revet muskatnød
- Friskkværnet peber
- Groft salt
- Smør og neutral olie til stegning
Instructions
Lav farsen:
Kom kød, revet eller hakket løg, æg, mælk, mel, sennep muskat, salt og peber i en skål.
Rør farsen godt sammen –til den er sej og ensartet.
Lad farsen hvile i 10-15 min.
Form frikadellerne:
Brug en spiseske dyppet i vand og form farsen til små, ovale deller.
Opvarm panden korrekt
Stegepander i rustfrit stål skal forvarmes grundigt – sæt den over middelhøj varme i 2-3 minutter.
Lav evt. vanddråbe-testen: Hvis vanddråber danser rundt, er panden klar.
Steg frikadellerne
Tilsæt smør og en smule olie på panden. Læg frikadellerne på og skru en smule ned for varmen.
Steg i 4-5 minutter på hver side, indtil de er gyldne og gennemstegte.
Vend kun én gang for at bevare stegeskorpen.
Lad dem hvile kort
Læg frikadellerne på en tallerken med lidt køkkenrulle og lad dem hvile 2 minutter inden servering.
