How to fry the perfect breaded fish fillet
There's nothing that beats a crispy, golden-brown fish fillet – especially when the breading sits right in the cupboard and the fish stays juicy and flavorful inside. But how do you get the perfect result at home without the breading falling off or the fish sticking to the pan? The answer lies in the technique – and the equipment.
In this guide, we show you step-by-step how to fry the perfect fish fillet – from breading to serving.

Ingredients
- 2 store fiskefileter (f.eks. rødspætte eller skrubbe)
- 1 dl hvedemel
- 1 æg
- 1 dl rasp
- Salt og friskkværnet peber
- Smør og olie til stegning
- Citronbåde og remoulade til servering
Instructions
Forbered paneringen
Kom mel i én tallerken, pisk æg i en anden, og hæld rasp i en tredje.
Krydr fisken med salt og peber.
Panér fisken
Vend fiskefileterne først i mel (tryk let), derefter i æg og til sidst i rasp.
Sørg for, at hele overfladen er dækket.
Opvarm panden
Varm din stegepande op ved middelhøj varme.
Tilsæt en blanding af smør og lidt olie – olien forhindrer smørret i at brænde på, og smørret giver god smag.
Steg fiskefileterne
Læg fiskefileterne på panden, når smørret bruser let.
Steg dem i ca. 2-3 minutter på hver side – afhængigt af tykkelsen – til de er gyldne og sprøde.
Lad dem dryppe af
Tag fiskefileterne af og lad dem ligge på en tallerken med køkkenrulle på i ca. 1 minut.
Anretning
Server din fiskefilet med citron og remoulade ovenpå.
Tip: Fiskefileter smager bedst, når de er helt friske. Så lad nu vær med at købe frosne fiskefileter.
