Chicken Tikka Masala – best in a sauté pan with high heat and a good base
Creamy, spicy and addictive – Chicken Tikka Masala is a classic that wins in both taste and texture. But an important part of the experience depends not only on the ingredients. The pot you choose makes a big difference. And here a sauté pan is an obvious choice.
A good sauté pan has a wide bottom and high, slightly curved sides, which makes it ideal for both frying and simmering. You get better heat distribution, a larger contact surface and plenty of space to build flavor layer by layer – exactly what is required in an Indian-inspired dish like this.

How to use the sauté pan optimally in this recipe
When you fry the chicken first in the sauté pan, you get a nice brown crust and leave flavor residue on the bottom, which later dissolves in the sauce and gives the dish depth. The wide bottom provides plenty of space so that the chicken doesn't sit and cook, but browns beautifully. Afterwards, you can sauté onions and spices in the same pan, add tomatoes and cream, and assemble the entire dish in one place – without compromising on the taste.
An enameled cast iron sauté pan also retains heat for a long time, allowing the dish to simmer quietly and absorb extra flavor – without burning. This makes it perfect for simmering dishes like this one.
The structure of the recipe – layers upon layers of flavor
Chicken Tikka Masala starts with a spicy yogurt marinade that tenderizes the chicken pieces and adds lots of flavor. The chicken is briefly fried and set aside while the sauce is built up in the same pot – with onion, garlic, ginger and warm spices. The chopped tomatoes and cream bring the dish together into a rich and round sauce that is both aromatic and balanced.
The finished chicken is returned to the pot and simmered in the sauce to absorb the flavors. The whole thing is served with basmati rice and warm naan bread – and preferably a sprinkle of coriander or a little lime on top.
Why the sauté pan is ideal for dishes with sauce
Sauté pans are designed for dishes where you need to fry, sauté and simmer. The large base ensures good heat distribution and caramelization, while the high sides prevent splashing and make it easy to stir the sauce. This makes them ideal for dishes like Chicken Tikka Masala – but also for ragù, curry, pasta sauces and casseroles.
