Chicken kofta with fresh herbs and yogurt dressing
These chicken koftas are a flavorful and light Middle Eastern-inspired dish – perfect for the grill, but easy to make in an enameled sauté pan or cast iron skillet. They’re spicy, juicy, and served with a fresh yogurt dressing that makes it all that little bit more delicious. Ideal for dinner or a weekend treat.
Ingredients
- Kofta
- 250 g hakket kylling (gerne lårkød)
- 0,5 lille løg, finthakket eller revet
- 1 fed hvidløg, finthakket eller presset
- 0,5 lille bundt frisk persille, finthakket
- 0,5 lille bundt frisk koriander, finthakket (kan udelades)
- 0,5 frisk chili, finthakket (styrke efter smag)
- 0,5 tsk stødt spidskommen
- 0,5 tsk stødt korianderfrø
- 0,5 tsk paprika (evt. røget)
- Et lille nip kanel (ca. 0,25 tsk)
- 0,5 tsk salt
- 0,25 tsk friskkværnet peber
- 1 spsk olivenolie
- Yoghurtdressing
- 100 g græsk yoghurt eller anden fast yoghurt
- 0,5 fed hvidløg, presset eller revet
- 1 spsk citronsaft
- 1 spsk finthakket frisk mynte (eller persille)
- Salt og peber efter smag
Instructions
Opskriften er til 4 koftaer
Lav koftaerne
Kom hakket kylling i en skål.
Tilsæt løg, hvidløg, krydderurter, chili og alle krydderier.
Hæld olivenolie i og rør farsen godt sammen med hænderne, til den er klistret og sammenhængende.
Del farsen i 4 lige store portioner.
Form aflange pølser. Skal du grille dine koftaer direkte på grillen er det nemmest at forme pølserne på træpinde eller metalpinde.
Lav yoghurtdressingen
Rør yoghurt, hvidløg, citronsaft og mynte sammen i en skål.
Smag til med salt og peber.
Stil på køl til servering.
Grill i støbejern på grillen
Tænd grillen på fuld kraft og læg en støbejernspande på direkte varme.
Lad den blive godt varm.
Fordel et tyndt lag olie på panden.
Læg koftaerne på og grill dem ca. 3-4 minutter pr. side, til de har en flot stegeskorpe.
Flyt til indirekte varme og grill færdig i 2-3 minutter.
ServeringServer koftaerne varme med yoghurtdressingen, lidt frisk salat og evt. fladbrød.
Pynt med ekstra friske krydderurter og et skvæt citron.

When making the stuffing, it is important to use minced chicken – preferably from the thigh – because it gives more juiciness. Together with onion, garlic, chili and warm spices such as cumin, coriander and cinnamon, you get an intense and deep flavor that plays perfectly against the yogurt dressing. The dressing is made with Greek yogurt, lemon and mint – simple but effective.
By forming the koftas around skewers and grilling them directly in an enameled sauté pan, you get both a crispy outside and a juicy middle. The smart thing about using the sauté pan instead of a regular grill grate is that it retains heat better and you avoid meat sticking.
