Grilled chicken with crispy skin, asparagus and fresh tomato salad
Grilled chicken with skin, green asparagus and a fresh tomato salad with burrata is a summer classic with lots of flavor and color. It's simple, light - and yet super satisfying. The chicken turns out juicy and crispy, the asparagus gets smoke and bite, and the tomato salad balances it all with acidity, creaminess and freshness. A perfect dish for the barbecue when the weather is nice and the food needs to be tasty without being heavy.
Time: approximately 45 minutes
Ingredients
- Kylling
- 2 kyllingelår eller overlår med skind (du kan også bruge kyllingebryst med skind)
- 1 tsk paprika
- 1 tsk tørret timian
- Salt og peber
- Olivenolie
- Asparges
- 250 g grønne asparges
- Olivenolie
- Salt, peber, evt. lidt citronsaft
- Tomatsalat
- 250 g solmodne tomater (gerne blandede farver og størrelser)
- 1 kugle burrata eller frisk mozzarella
- Frisk basilikum
- 1-2 spsk god olivenolie
- 1 tsk rødvinseddike eller balsamico
- Flagesalt og sort peber
Instructions
Kylling:
Gnid kyllingelårene med olivenolie, paprika, timian, salt og peber.
Grill dem på en stegeplade med skindsiden nedad først over indirekte varme i 20-25 min med låg på – så bliver skindet sprødt uden at brænde.
Til sidst gives direkte varme i 2-3 min på hver side for stegeskorpe.
Asparges
Knæk den træede ende af.
Vend i lidt olie, salt og peber.
Grill i 3-4 minutter – vend dem jævnligt, til de har fået lidt skorpe og stadig har bid.
Dryp evt. med lidt citronsaft lige inden servering.
Tomatsalat
Skær tomaterne i skiver eller halve, alt efter størrelse.
Anret på et fad, læg burrata i midten.
Drys med salt, peber og riv lidt basilikum over.
Dryp med olivenolie og eddike – evt. lidt citronskal for ekstra friskhed.

Why you should cook chicken and asparagus on a carbon steel griddle
Grilled chicken with skin and crispy green asparagus is a classic – but if you want to take both the taste and the frying surface to the next level, a carbon steel frying pan is the way to go. The asparagus also gets a boost. On a carbon steel plate, they can be turned easily and quickly, and because the surface is closed, you avoid them falling between the grooves. They get beautiful grill marks, retain their bite and taste more intensely because the heat seals them quickly.
