Breakfast Burritos with Eggs, Bacon and Cheese

Crispy bacon, soft eggs and melted cheese rolled in a warm tortilla – breakfast burritos are the kind of breakfast you look forward to. And when you use an enameled cast iron skillet, you get even heat, a crispy bottom and full control over both frying and assembly. It’s ideal for everything from bacon to eggs to warm wraps.

Ingredients

  • Nedenstående er til 4 burritos
  • 4 store tortillawraps
  • 6 æg
  • 150 g bacon i tern
  • 1 lille løg, finthakket
  • 1 peberfrugt, i tern
  • 100 g revet ost
  • Salt, peber og evt. chiliOlie eller smør til stegning

Instructions

Steg bacon sprødt på en stegepande eller sautergryde.

Steg løg og peberfrugt i baconfedtet til de er bløde.

Pisk æg og hæld på pladen – rør rundt til de er cremede.

Krydr med salt og peber.

Varm tortillas let og fyld med æg, bacon, grønt og ost.

Fold burritos og giv dem evt. en hurtig ristning på stegepladen for sprød bund.

Make breakfast burritos in an enameled cast iron skillet – one pan for everything

Making breakfast burritos in an enameled cast iron skillet is a game-changer if you want crispiness, creamy eggs, and easy cleanup—all in one pan. Many people use a frying pan for these types of recipes, but a good cast iron skillet gives you more advantages: better heat distribution, longer heat retention, and the ability to cook the entire dish from start to finish without changing utensils. You start by frying the bacon cubes until crispy right in the skillet. The enameled surface prevents the fat from burning—and it’s easy to use the bacon fat for the next step: sautéing finely chopped onions and bell peppers until the vegetables are soft and sweet. The whole thing can be done over low to medium heat, where the skillet maintains an even temperature without hotspots.

Once the vegetables are ready, you can add the beaten eggs directly to the pan and stir gently until they are creamy and fluffy – just like scrambled eggs should be. The heavy pan retains the heat, but the heat doesn’t get so intense that the eggs dry out. This is where it really becomes clear why an enameled cast iron pan is ideal for more than just simmering dishes.

While the filling is staying warm in the pan, you can briefly warm your tortilla wraps in the oven or pan, fill them with eggs, bacon, greens and cheese – and then place the rolled burritos back in the pan, seam side down. The enameled cast iron pan now acts as a kind of grill pan and gives your burritos a crispy, lightly caramelized bottom. It makes all the difference, both in texture and taste.
