Shakshuka – Spicy tomato soup with eggs
Shakshuka is a flavorful and simple dish with roots in the Middle East and North Africa. It consists of eggs poached directly in a spicy tomato sauce with onions, garlic and bell peppers – and it is both easy, filling and perfect for breakfast, brunch or a meatless dinner. When making shakshuka, it is important to use a pan with high sides and even heat distribution – and here is asauté panAbsolutely ideal. Ingredients
- 1 spsk olivenolie
- 1 løg, finthakket
- 2 fed hvidløg, finthakket
- 1 rød peberfrugt, i små tern
- 1 tsk paprika
- ½ tsk spidskommen
- ½ tsk chiliflager (valgfrit)
- 1 dåse hakkede tomater (400 g)
- Salt og peber
- 4 æg
- Frisk persille eller koriander til pynt
- Feta eller fladbrød til servering (valgfrit)
Instructions
Sautér grøntsager:
Varm olivenolie op på panden.
Sautér løg, hvidløg og peberfrugt i 5-6 minutter, til de er bløde og let karamelliserede.Tilsæt krydderier og tomater
Tilsæt paprika, spidskommen og evt. chiliflager.
Hæld hakkede tomater i og lad saucen simre i 10-12 minutter, til den tykner lidt.
Smag til med salt og peber.
Lav ægge-reder
Lav fire små fordybninger i saucen med en ske.
Slå æggene forsigtigt ud i hullerne.
Dæk og stegLæg låg på panden og lad retten simre i 6-8 minutter, indtil æggene er pocherede, men stadig har blød blomme.
Servér
Top med friskhakket persille eller koriander og evt. smuldret feta.
Servér med fladbrød, ristet brød eller pitabrød.
