Cheesy garlic bread with brie & parmesan
This cheesy garlic bread is equal parts savoury, crunchy and full of flavour. A delicious loaf is filled with soft butter with roasted garlic and fresh parsley, and topped with brie and parmesan before being baked in enamelled cast iron for maximum crispiness and even heat. The bread gets a caramelised cheese top, while the centre stays soft and juicy. Perfect as an appetizer, tapas or as that snack everyone at the table will pounce on.
Ingredients
- 1 lækkert brød – ca. 800–1000 g
- 100 g blødt smør
- 1 helt hvidløg
- ½ tsk salt
- 3–4 spsk finthakket persille
- 200 g brie
- Evt. 50–100 g parmesan
- Frisk persille til pynt
Instructions
Forvarm ovnen til ca. 180 °C (almindelig ovn).
Placér hvidløget i en mini-støbejernsgryde med lidt olie og flagesalt.
Bag hvidløget, til det er blødt og gyldent.
Lav hvidløgssmør: Riv smørret på et rivejern og bland det i en skål med det bagte hvidløg, salt og hakket persille.
Lav længdegående snit i brødet på tværs og på langs uden at skære helt igennem.
Lav fx diagonale snit ca. 2–3 cm dybe, så du skaber lommer til smør og ost.
Åbn lommerne let med fingrene, en ske eller en kniv.
Fordel hvidløgssmørret i hver sprække.
Pensl også lidt smør på toppen og siderne.
Skær brien i tynde skiver og placér dem mellem revnerne i brødet.
Riv parmesan over toppen af brødet.
Placér brødet i en dyb støbejernsgryde med bagepapir i bunden.
Sæt låget på og bag i ovnen i 20–25 minutter.
Alternativt kan du bruge et støbejernsfad og bage brødet uden låg i 15–20 minutter for ekstra sprødhed.
Tag låget af og bag yderligere 5–10 minutter, indtil brødet er gyldent og osten smeltet og boblende.
Tag brødet ud og lad det hvile i 2–3 minutter.
Drys evt. med ekstra persille eller purløg og lidt flagesalt.
Server med det samme – lad gæsterne rive, trække og dele fra brødet.
Brug evt. grøn pesto som dyppelse.

Cheesy garlic bread – even better when baked in enameled cast iron
