What is a santoku knife?

The Santoku knife, also known as the “Japanese/Asian chef’s knife”, originally comes from Japan. The Santoku knife most resembles the common Western chef’s knife that we know from Europe. Since the Santoku knife originated in Asia, it is actually still one of the most used kitchen knives in Asia. However, it has also spread to the rest of the world and has made a big impact in the Western world as well. What is the difference between a santoku knife and a regular chef's knife?

Although a santoku knife is very similar to the classic Western chef's knife, there is a significant difference. The biggest difference between a santoku knife and a traditional chef's knife is the blade and the angle of the blade. The angle of the santoku knife's blade is more straight compared to a regular chef's knife, which also means that you can't make the same rocking movements with a santoku knife that you can with a chef's knife.
