Pizza with chorizo
Crispy base, melted cheese and spicy chorizo – homemade pizza with chorizo is both easy and tasty. The salty, slightly spicy sausage adds depth to the pizza, and together with a good tomato sauce and mozzarella you get a pizza classic with character. Here you get the recipe from scratch – including tips for dough, baking and toppings, so you can get perfect pizza at home, whether you use a baking steel, pizza oven or regular oven.

Ingredients
- 500 g tipo 00 mel (eller hvedemel)
- 3,5 dl koldt vand
- 10 g fint salt
- 2 g tørgær (eller 5 g frisk gær)
- 1 spsk olivenolie (valgfrit)
- Tomatsauce
- 1 dåse hakket tomater
- 1 fed hvidløg
- 1 lille chili
- Frisk eller tørret oregano
- Salt og peber
- Topping
- Nedenstående er topping pr. pizza 3-4 spsk tomatsauce
- 150-200 g mozarella
- 80-100 g skiveskåret chorizo
- Frisk basilikum
- Olivenolie til pensling af skorpe
Instructions
Lav pizzadejen (dagen før)
Følg opskriften på koldhævet pizzadej for bedst resultat.
Lad dejen hæve 24 timer i køleskab, og tag den ud 1-2 timer før brug. Del i 2-3 boller og lad dem temperere.
Bland tomatsaucen
Bland hakkede tomater, revet hvidløg, revet chili, oregano, salt og peber i en skål
Form pizzaerne
Forvarm din ovn eller grill til temperatur (250–300°C).
Brug bagestål eller pizzasten hvis muligt.
Ved grill er det nødvendigt.
Form dejen til tynde bunde (ikke rul – brug hænderne).
Smør med et tyndt lag tomatsauce.
Top og bag
Fordel mozzarella, skiver af rød peber og chorizo på pizzaen.
Bag i 6–10 minutter, afhængigt af ovn og varme, til bunden er sprød og osten smeltet.
Pensl evt. skorperne med olivenolie inden bagning for ekstra farve.
Servér
Top evt. med frisk basilikum og et lille drizzle god olivenolie.
