Potato pizza with crispy base and creamy topping

Potato pizza is a delicious and simple take on a classic pizza – and when baked on a grill with a baking steel, you get a base that is both crispy and slightly bubbly. Thin potato slices, rosemary, garlic and good cheese provide a perfect balance between soft creaminess and light crispness. To get the potatoes cut ultra-thin and precisely, we always recommend using amandolin iron- Remember to soak your slices in water to remove the starch before putting them on the pizza

Ingredients

  • Pizzadej
  • 500 g tipo 00 mel (eller hvedemel)
  • 3,5 dl koldt vand
  • 10 g fint salt
  • 2 g tørgær (eller 5 g frisk gær)
  • 1 spsk olivenolie (valgfrit)
  • Topping
  • Top pizzaen efter behov
  • Ricotta
  • Mozzarella
  • Parmesan
  • Tynde kartoffelskiver
  • Frisk eller tørret rosmarin
  • Salt og peber

Instructions

Lav Pizzadejen (dagen før)

Følg opskriften på koldhævet pizzadej for bedst resultat.

Lad dejen hæve 24 timer i køleskab, og tag den ud 1-2 timer før brug.

Del i 2-3 boller og lad dem temperere.

Klargør topping

Skær kartoflerne i meget tynde skiver med et mandolinjern.

Læg dem i koldt vand i 5-10 minutter og dub tørre.

Riv eller hak hvidløg,

Form pizzaerne

Forvarm din ovn eller grill til temperatur (250–300°C).

Brug bagestål eller pizzasten hvis muligt. Ved grill er det nødvendigt.

Form dejen til tynde bunde (ikke rul – brug hænderne).

Top og bag

Top pizzaen alt efter hvor meget fyld du ønsker

Brug evt. en pizzaspade til at tage pizzaen ind og ud af ovnen.

Bag i 6–10 minutter, afhængigt af ovn og varme, til bunden er sprød og osten smeltet.

How to make potato pizza with a baking sheet
