Bruschetta with burrata, tomato and fresh basil
Bruschetta is the perfect starter, snack or appetizer – simple, flavourful and always a hit. In this version, we elevate the classic tomato-basil topping with creamy cream cheese and a twist of balsamic or chilli oil. The result? A crispy and fresh bite that balances sweetness, acidity and umami. Ready in just 15 minutes and just as suitable for summer fun on the terrace as for the tapas table.
Ingredients
Bread & base
- 1 baguette or small sourdough bread
- 1 clove of garlic
- 100g ricotta or burrata
- 1-2 tablespoons olive oil
Tomato topping
- 4-5 ripe tomatoes
- A handful of fresh basil
- 1 tablespoon olive oil
- 1 teaspoon balsamic vinegar (optional)
- Salt and pepper
Procedure
Toast the bread
- Cut the bread into slices and toast them in a pan or in the oven (200°C for 6-8 min).
- Rub with half a clove of garlic while they are hot.
- Brush with a little olive oil.
Prepare the tomato topping
- Cut tomatoes into small cubes.
- Mix with olive oil, a little balsamic vinegar, salt, pepper and chopped basil.
Butter and top
- Spread cream cheese on each slice of bread.
- Place the tomato mixture on top.
- Top with grated parmesan, a dollop of burrata or a little extra basil.
Finishing touches
- Drizzle with balsamic glaze, honey or chili oil for extra flavor.
