'One Pot' with red curry, dumplings & udon noodles

A 'One Pot' soup with red curry, dumplings and udon noodles is one of those dishes that is both cozy, warm and incredibly flavorful – and surprisingly easy to make. This recipe combines the best of Thai and Japanese cuisine: the aromatic red curry, the creamy coconut milk and the soft, chewy udon noodles.

Ingredients

  • 1 tablespoon neutral oil (e.g. rapeseed or sesame)
  • 2 tablespoons red curry paste (adjust to taste)
  • 1 tablespoon finely grated ginger
  • 2 cloves garlic, finely chopped
  • 1 stalk of lemongrass, lightly crushed in a mortar
  • 2 cans coconut milk (800 ml)
  • 4-5 dl chicken stock or vegetable stock
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar or honey
  • Juice of ½ lime
  • 200–250 g udon noodles
  • 12–16 dumplings (e.g. gyoza)
  • 200 g edamame beans, shelled
  • 2 spring onions, sliced
  • Sesame seeds
  • Lime boats

Procedure

  1. Heat the oil in a wok over medium heat. Sauté the red curry paste, ginger, garlic and crushed lemongrass for 1–2 minutes until fragrant.
  2. Add coconut milk and stock. Stir well and let the soup simmer for 8–10 minutes.
  3. Season with fish sauce, sugar and lime juice. Adjust the strength with extra curry paste or a little chili oil.
  4. Add spring onions, edamame beans and dumplings and simmer for 5–7 minutes until your dumplings have absorbed lots of flavor and become soft and delicious.
  5. Add your udon noodles and let them simmer in the soup for 2-3 minutes.
  6. Top with spring onions, sesame, lime juice and possibly chili oil.
